[mulberry muffins]


Ingredients :
– 3 cups of all-purpose flour
– 1 cup of brown sugar
– 4 teaspoons of baking powder
– 2 cups of light milk
– 1 stick of unsalted butter, melted & cooled
– 1 teaspoon of grated lemon & orange zest
– 2 cups of fresh mulberries
– 2 eggs
– 1 teaspoon of vanilla extract

For topping :
– 3/4 cup of all-purpose flour
– 1/2 cup of brown sugar
– 1 teaspoon of grounded cinnamon
– 1/4 teaspoon of salt
– 1/2 stick of cold unsalted butter, diced

How to ? :
– preheat oven to 350°C
– sift the flour, sugar, baking powder and salt into a large bowl & blend with your hands
– in a seperate bowl, whisk together the milk, butter, lemon zest, orange zest, eggs and vanilla extract
– stir the milk mixture into the flour mixture until blended
– fold the mulberries & don’t over mix
– fill into the prepared cups (almost full)

• For the topping :
– place all ingredients in the bowl & mix
– spoon about 1 tablespoon on top of each muffin

– bake the muffins for 20 to 25 minutes, until golden brown

note :
– wash the mulberries
– preferred to serve with an ice cream scoop (vanilla)
